Datura - Mikava Marsella Reserva Lot 233
This exceptional lot is a new collaboration between Datura and Motors Coffee. Produced by Kevin Doyle and Paul Doyle, the coffee showcases their continued refinement of controlled fermentation techniques. The result is a remarkable coffee with layers of yellow and red fruit, lifted by vibrant florals and a juicy, balanced structure that highlights Mikava’s distinctive profile without excessive fermentation or heaviness.
Harvested at the end of November, the green coffee is exceptionally fresh, giving the cup a lively intensity that will continue to evolve over time. Cherries were fermented in stainless steel bioreactors with CO₂ flushing, then slowly dried on raised beds under shaded solar dryers for three weeks before a brief mechanical finish to reach 10.8% moisture. This is a meticulous process that preserves clarity while building depth and complexity of the coffee.
